Ingredients
For 4 servings:
- 2 tablespoons flax meal (ground flaxseeds)
- 6 tablespoons warm water
- 1 tablespoons extra-virgin olive oil, divided
- 1/4 medium red onion, finely chopped (about 1/4 cup)
- 2 cloves garlic, finely chopped
- 1 bunch lacinato kale, stemmed and finely chopped
- 2 cups cooked quinoa
- 1 1/2 cups cooked brown or green lentils
- 1 tbsp roasted pumpkin seeds, roughly chopped
- 1/4 cup finely chopped fresh Italian flat-leaf parsley
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoons tahini
- Juice of 1 lemon (about 2 tablespoons)
- 2 tablespoons whole wheat flour (or almond flour for a gluten-free option)
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon freshly ground black pepper

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix the flax meal with warm water and set aside to thicken.
- In a medium sauté pan over medium-high heat, warm 1/2 tablespoons of olive oil. Add the red onion and cook, stirring frequently, for about 3 minutes or until the onion is translucent and starting to caramelize slightly.
