Ingredients
For 5 servings
- 2 teaspoons olive oil
- 2 clove garlic finely minced
- 1 tablespoon ginger freshly grated
- 6 tbsp soy sauce
- 3 tbsp dark brown sugar
- 450 grams beef
- 2 tablespoons cornstarch
- 6 scallions trimmed and thinly sliced (150 g)
Instructions
- Coat the beef evenly with cornstarch by tossing it in a mixing bowl. Keep it aside.
- Heat a bit of oil in a small saucepan to make the sauce. Add garlic and ginger and cook for half a minute. Then, add soy sauce and brown sugar and let it simmer. Stir constantly over medium heat until the sugar dissolves and the sauce reduces slightly. This should take around 4 minutes. When it’s finished, please set the sauce aside.
- To cook the beef, you will need a large skillet. Preheat the skillet on medium-high heat. Sauté the shaved steak in batches, ensuring the pan is not overcrowded. Flip the pieces as they brown and cook for about 2 minutes. Take the cooked beef from the skillet and place it on a plate or tray with paper towels. Add oil to the skillet before repeating the process with the remaining meat.
- Before adding more beef, ensure the oil returns to a pleasant temperature. Remove the meat once it gets crispy on the edges but is still pink in the middle, as it will finish cooking later.
- If excess oil is in the pan, pour it off or use paper towels to remove it. Next, return the skillet to medium-high heat and add all the beef back to the pan. Pour the Mongolian sauce over the meat and toss to coat it evenly. Then, add the green onions and stir the mixture for approximately 3 minutes until the beef is reheated, the sauce has thickened, and the meat glazed.
