Ingredients
For 5 servings
- 1 kg sweet potatoes, peeled and roughly chopped
- 3 medium free-range eggs
- 500 ml fish stock or 1 fish stock cube dissolved in hot water
- 50 g unsalted butter (use olive oil for a lighter option)
- 50 g plain flour (substitute with almond flour for gluten-free)
- 2 tbsp gochujang
- 1 tsp rice wine vinegar or white wine vinegar
- 400 g fish pie mix (cod, salmon, and smoked haddock)
- 75 g peas
- 100 g spinach, roughly chopped
- 1 tbsp black sesame seeds
- 4 tbsp crunchy kimchi, to serve
Instructions
- Boil the sweet potatoes in salted water until tender (about 20 minutes). Remove them with a slotted spoon, set aside to steam dry, then mash with half of the butter and a pinch of salt. In the same pot, boil the eggs for 6½ minutes. Cool them in cold water, then peel and halve.
- If using a stock cube, dissolve it in 500 ml of boiling water. If using fresh stock, warm it slightly. Melt 25 g of butter in a saucepan over medium heat, then whisk the flour to form a roux. Cook for 2 minutes while whisking, then slowly add the hot fish stock, whisking continuously to avoid lumps. Stir in the gochujang and vinegar, seasoning with salt and pepper. Allow the sauce to cool slightly.
- Preheat your oven to 180ºC. Mix the fish pie mix, peas, and spinach into the cooled sauce. Pour the mixture into an ovenproof dish. Place the halved eggs into the sauce, then cover the top with the sweet potato mash. Sprinkle with black sesame seeds.
- Bake for 30 minutes until the top is golden and the filling is bubbling. Serve hot with a spoonful of crunchy kimchi on the side.
